A gelato cake is an easy centrepiece for a birthday or a family celebration. A little planning makes sure it arrives firm and is served soft.
- Size: count one slice per guest, plus a few spare. Ask the shop how many each size serves.
- Order ahead: most gelaterie need at least two days, and more for summer weekends.
- Flavours: choose two or three that most guests like, and tell the shop about any allergies when you order.
- The trip home: bring a cool box or ask for an insulated box, and put the cake straight into the freezer.
Serving
Take the cake out of the freezer ten to fifteen minutes before serving. Dip a long knife in hot water and wipe it between slices for clean cuts.
