Where our meat comes from
We buy whole and half animals from a few farms near Springfield and break them down by hand behind the counter. That is how we can cut to order, and why nothing goes to waste: the trimmings become sausages, burgers and stock.
- Ask at the counter which farm a cut came from.
- Beef is hung in our cold room before it is cut.
- Sausages, burgers, pies and stock are made here.
- Bones and fat for your dog or your stock pot, just ask.

Questions at the counter
Anything else? Call (555) 017-0118 or ask whoever is behind the counter.
How far ahead should I order?
For everyday cuts, order by Thursday for Saturday collection. Meat boxes need two days’ notice, and holiday roasts should be ordered by the dates on our holiday list.
How should I keep fresh meat at home?
Keep it in the coldest part of the fridge, at 40°F (4°C) or below, on the bottom shelf. Cook or freeze ground meat and poultry within one to two days, and steaks, chops and roasts within three to five days.
Can I freeze what I buy?
Yes. Freeze it on the day you collect, well wrapped, and thaw it in the fridge rather than on the kitchen counter. Ask us to vacuum-pack your order for the freezer.
What about allergens in the deli?
Deli products can contain milk, wheat (gluten), egg, mustard, celery, sulphites and other allergens, and they are prepared in the same space. Ask us for the full ingredients before you buy, and tell us about any allergy when you order.
Can you cut something that is not on the counter?
Usually, yes. Most cuts can be prepared from what is in the cold room. Tell us the recipe and we will suggest the cut and the weight.
How do I pay?
Pay when you collect, by card or cash. Large orders and holiday roasts need a deposit (example policy).
