How to choose your coffee beans

A wall of coffee bags can be confusing. Four simple questions narrow it down to a bag you will actually enjoy.

1. How do you like your coffee to taste?

Lighter roasts keep more of the bean’s own character: often fruity, floral or bright. Medium roasts are rounder, with notes of caramel, nuts and chocolate. Darker roasts taste bolder and more bitter, and stand up well to milk.

2. Where does it come from?

Origin and processing shape the flavour. Washed coffees tend to taste clean and crisp; natural (dry-processed) coffees are often sweeter and fruitier. The tasting notes on the bag are a good guide.

3. When was it roasted?

Look for a roast date, not just a best-before date. Most coffee tastes best from a few days to a few weeks after roasting. Buy smaller bags more often rather than one large bag.

4. How will you brew it?

  • Espresso and moka pot: medium and darker roasts are easier to get right.
  • Filter, pour-over and AeroPress: lighter roasts shine.
  • French press and cold brew: medium roasts with chocolate and nut notes work well.

If you can, buy whole beans and grind them just before brewing. Not sure where to start? Ask the barista what they are enjoying this week: most will happily let you taste before you buy.
